Ingredients
- 4 red peppers
- 1/2 cup white wine
- 1/4 cup olive oil
- 1 cup organic chicken stock
- 1 tsp salt
- 1/2 tsp pepper
Directions
- Wash peppers and cut into small pieces.
- Warm oil in a pan, add peppers and cook until tender, about 10 minutes.
- Add wine, chicken broth, salt and pepper and bring to a boil. Cover and cook on low for 15 minutes until peppers tender.
- Let cool slightly. Place pepper mixture into a high speed blender and puree until smooth.
- Serve with your favorite pasta. Good with penne.
