Pasta with Fresh Pesto Sauce

Pesto Directions

  1. Place pine nuts in a small skillet and toast for 1-2 minutes. Watch closely or they will burn. Set aside to cool.
  2. In a food processor or blender, process the garlic, basil and pine nuts until finely chopped.
  3. With the machine running, pour in the oil in a steady stream.
  4. Add the cheeses, salt and red chip pepper. Remove to a bowl until ready to use.
  5. Extra pesto can be frozen in a plastic container for up to 2 months.

Directions

  1. Make pasta of your choice as per package directions.
  2. Combine pasta and pesto, adding more pesto as desired.
  3. Serve with additional parmesan if desired.
