Pesto Ingredients
- 4 cups fresh basil leaves
- 4 medium sized garlic cloves chopped
- 1/2 cup Pine Nuts
- 2/3 cup olive oil
- 1/2 cup parmesan cheese
- 1/4 cup romano cheese
- 1 tsp salt
- 1/4 tsp red chip pepper
Dish Ingredients
- 1 Lb of Pasta
- 1/2 Cup of Pesto
Pesto Directions
- Place pine nuts in a small skillet and toast for 1-2 minutes. Watch closely or they will burn. Set aside to cool.
- In a food processor or blender, process the garlic, basil and pine nuts until finely chopped.
- With the machine running, pour in the oil in a steady stream.
- Add the cheeses, salt and red chip pepper. Remove to a bowl until ready to use.
- Extra pesto can be frozen in a plastic container for up to 2 months.
Directions
- Make pasta of your choice as per package directions.
- Combine pasta and pesto, adding more pesto as desired.
- Serve with additional parmesan if desired.
