Chicken Couscous with Tomatoes, Avocado, Cheese, and More

  1. Cook the couscous according to instructions on the package
  2. Combine lime juice, olive oil and 1/2 tsp chili powder. Brush on chicken breast and grill in broiler or oven 12 minutes turning halfway through.
  3. Chop the chicken, avocado and tomatoes into bite size pieces.
  4. Strain the beans and corn and rinse
  5. In a glass baking dish, mix the couscous, 1/2 tsp chili powder, chopped chicken, tomatoes, olives , beans, and corn.
  6. Evenly distribute the shredded cheese on top of the mixture and bake in the oven 5-8 minutes until the cheese is melted.
  7. Remove from oven, top with fresh avocado and serve.
