Ingredients
- 4 Boneless Chicken Breasts
- 1 Avocado
- 3 Medium Tomatoes, chopped
- 1 tsp Chili Powder, divided
- 1 Can of Corn, drained and rinsed
- 1/4 cup chopped black olives
- 1 8 oz Package of Shredded Cheddar Cheese
- 8 oz Black Beans
- 1/2 lime juiced
- 1 box of Couscous
Directions
- Cook the couscous according to instructions on the package
- Combine lime juice, olive oil and 1/2 tsp chili powder. Brush on chicken breast and grill in broiler or oven 12 minutes turning halfway through.
- Chop the chicken, avocado and tomatoes into bite size pieces.
- Strain the beans and corn and rinse
- In a glass baking dish, mix the couscous, 1/2 tsp chili powder, chopped chicken, tomatoes, olives , beans, and corn.
- Evenly distribute the shredded cheese on top of the mixture and bake in the oven 5-8 minutes until the cheese is melted.
- Remove from oven, top with fresh avocado and serve.
